PBJ & Apple Rollups and Five-Fruit Salad
What’s for lunch? A super-fast, nutrient packed wrap and fruit salad, that’s what!
Ingredients
1/2 cup diced apple
1 1/2 cups assorted chopped strawberries, pears, grapes, and pitted cherries
4 whole grain flour tortillas
1/2 cup all-natural creamy peanut butter
1/4 cup 100% strawberry jam
1 cup finely chopped apple
Directions
1. In a large bowl, toss the diced apple with the assorted fruit. Set aside.
2. Spread each tortilla with 2 tablespoons peanut butter and 1 tablespoon strawberry jam. Sprinkle half of each tortilla with 1/4 cup finely chopped apple.
3. Roll the tortillas up and press on edges to seal; cut in half. Serve with the fruit salad.
Makes 4 servings

I just made this wonderful idea with my son. We used green apples in ours. It came out just great, perfect with a nice glass of milk!
